Don’t be afraid to Drink Pink! Nothing is more delightful on a warm day at the beach than a crisp, dry, refreshing blush! We call this wine Rosa di Rame – it means rose of copper in Italian! That’s because it’s not really pink – it’s the most amazing copper color. The color of a brand new penny. It Italy, Pinot Grigios done in this style are called Metodo Ramato (copper colored method) and they are prized for sipping on sunny afternoons or balmy Mediterranean evenings!
Pair this wine with a salad of Arugula, shaved Fennel and a creamy Low Fat Tarragon Salad Dressing (recipe follows) and you’ll never be afraid to Drink Pink again!

LOW FAT CREAMY TARRAGON DRESSING
1 T olive oil
2 T cider vinegar
3 T non-fat plain Greek yoghurt
1/2 t your favorite dried herb (Mrs. Vino likes Tarragon or Dill)
1 clove garlic, finely minced
salt and pepper
I use a big coffee cup to mix this all up. Start by putting in the vinegar, then a few grinds of salt and pepper to taste. Add the herbs and give it a little whisk. Then add the oil, garlic and finely the yoghurt. Whisk like crazy til combined. Let sit in the fridge for 15 minutes before using. This is my universal . . . white thing. Use it to top poached salmon, or on baked potatoes. It makes a great binder for a creamy Waldorf salad with diced chicken breast and dried cranberries. Use your imagination.
